March 3rd is Hinamatsuri, which literally translates to, “Doll Festival”, but it is often referred to as Girls Day.

At Azay, we are excited to put together a Chirashizushi highlighting the house-made Kyoto-specific tsukemono, Shibazuke (eggplant, cucumber, myoga japanese ginger), Senmaizuke (pickled turnip), and Yuzu Daikon, as well as Shime Saba (cured mackarel), ebi (shrimp), pickled turnip greens, shiitake, kinshi tamago (shredded egg), ikura (salmon roe), and snowpeas.

We are also pairing it with a light and flavorful Asari Ushio-jiru (Clear Clam Soup).
