Timbal Élysée Lassere
There a restaurant in Paris named Champs-Élysées named Lasserre, where we drew our inspiration for this dessert.
To plate the dessert, place a nickle sized amount of the chocolate mousse on the plate. This will hold the tuile cookie in place when placing it on the plate.
Next, scoop the chocolate mousse with a warm spoon into the cookie, then follow with the mixed berries and mint leaf.
To finish the dish, place the Caramel Dome on top as pictured in the photo.
